Peanut Butter and Apple Cookies

Apples and Peanut butter are by far my favorite snack. I’m SO excited about this cookie. I found myself testing, err, TASTING the batter a lot with this one.

  • 1 stick softened butter
  • 1/2 cup granulated sugar
  • 1/4 Cup packed light brown sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 1/2 Cup creamy peanut butter
  • 3/4 Cup vanilla granola clusters
  • 1 1/2 Cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt (not pictured –  Ooops!)
  • 1 Cup diced apples (I used red delicious – This only took 1 apple)
  • Roll cookies in:
  • 2/3 cups of Sugar
  • 1 tablespoon of Cinnamon

Mix Sugars and Butter first

Pre-heat the oven to 350 degrees. Mix the butter and sugars together using either hand mixer or stand mixer. Then add the egg, vanilla and peanut butter. Mix together thoroughly.

Add in the dry ingredients: Flour, granola, salt and baking powder. Mix in slowly.

Peel, core and then dice the apple. I purposely diced mine in different sizes. Nothing bigger than 1/4″ pieces.

Add in apples using the lowest setting. Use spoon to scoop out the batter and roll it in the cinnamon sugar mix (If you prefer roll in just sugar). Placed on greased cookie sheet.

Press with tines of the fork to make an X on top of the cookies.

Place them in the oven for 9 minutes. Depending on the size of the cookies they may need to bake a little longer.

Allow to cool for a couple of minutes. Then DIG IN!
